I've been trying to add more veggies to each meal. I decided to try spaghetti squash and found it to be delicious! The best part is, my daughter now prefers it to regular spaghetti and asks for it frequently. I also added spinach to my breakfast burritos. I make a batch of about 12 burritos with air-fried potatoes, eggs, diced ham, spinach, and a bit of cheese. The protein helps satisfy my hunger for several hours and I avoid stopping for fast food on the way to work. Meal planning and increasing my vegetable servings each day has been a fun challenge!
